| WHEREAS, The members of the Illinois House of |

| Representatives are pleased to congratulate Chef Paul Virant, |

| owner of Vie in Western Springs, on his recent appearance as a |

| competitor on Iron Chef America; and

| WHEREAS, Chef Virant was introduced by the Chairman, who |

| mentioned that Chef Virant was from Missouri, where his |
| 8 |
| grandmothers took him to the local smokehouse and farmers |
| 9 |
| market; he was also taught how to preserve fruit and pickle |
| 10 |
| vegetables; he went to the Culinary Institute of America and |
| 11 |
| worked in New York City before opening Vie in Western Springs; |

| WHEREAS, The Iron Chefs were introduced and Masaharu |

| Morimoto was selected to compete against Chef Virant; pheasant |

| was presented as the secret ingredient and the battle began; |

| WHEREAS, Iron Chef Morimoto presented his dishes to the |

| judges first; he won praise from the judges for his pheasant |

| rice with grilled pheasant breast; and
